Ingredients:
1 can pumpkin ( 16 oz)
1 cup brown sugar
1 tbl. Spoon pumpkin pie spice
1 tbl spn GF flour
½ tsp salt
1 can evaporated milk (13oz)
2 eggs, beaten
In 2 qt. casserole blend together pumpkin,, brown sugar, spice, flour, salt, milk and eggs. Microwave at medium 12 to 14 minutes, stirring every 5 minutes, until hot and thickened.
Pour hot pumpkin custard into prepared pie shell. Microwave at medium 22 to 25 minutes, rotating dish. Pie is done when the edges are set and the center is still soft.
