Elizabeth Smith, owner
I am Elizabeth Smith, a loving wife and mother of three boys. Although I have been living with the symptoms of celiac disease from childhood, I was diagnosed in 2004. I am a certified nutritionist and weight management counselor. I have two favorite sayings, “Eat to live…don’t live to eat” and “When one door closes, two doors open”.
Elizabeth earned a degree in business and marketing in 1995, where she started her own business in south Florida. She moved to Mississippi in 2001, where she started having multiple health problems and visiting the hospital on a monthly basis. In 2004, she was diagnosed with celiac disease and has been on a gluten free diet ever since. Since the disease was not caught in a reasonable time, Elizabeth now battles numerous health issues on a day to day basis. As Elizabeth became more knowledgeable about the disease, she found that there were numerous people with the disease who were not. Therefore, she went back to school and received her certificate in nutrition. Since then, Elizabeth has been counseling individuals and families with celiac disease, started her own websites, founded the Gulf Coast Celiac Foundation and worked with restaurants and the medical community to teach them about celiac disease and nutrition.
Elizabeth found that there is an overwhelming need in the U.S. for a service whereby a newly diagnosed celiac patient can discuss the disease with someone one-on-one. She understands the confusion, anxiety and stress that comes with first being diagnosed. Elizabeth has learned how to simplify the learning process of this disease and she tries to make it as stress free as possible.
